病原菌胁迫 生理生化 营养物质

果实成熟，是指经过一系列生理生化变化而达到最佳食用状态的过程，是果实品质形成的必要前提。然而，随着果实成熟，其对病原菌的抗性也显著降低，导致一系列采后病害的发生，造成巨大的经济损失。传统贮藏保鲜技术通常需要抑制或延缓成熟进程，以牺牲成熟品质为代价，获得较长的货架期，这也导致果实风味和营养物质的严重丧失。因此，如何在有效维持果实成熟品质的同时，增强其对病原菌的抗性是采后生物学研究的重要课题。
